How gum arabic emulsifies a drink
Flavour oils do not mix with water. Left alone they separate and float to the top as an oily ring. Gum arabic solves this: it has a surface-active protein fraction that anchors at the boundary between oil and water and forms a protective film around each tiny oil droplet. That film keeps the droplets small and stops them recombining or rising, so the drink stays evenly clouded and flavoured through its shelf life.
What makes it unusually good for drinks is that it does this at low viscosity even at high solids, so it works in concentrated beverage emulsions and syrups without turning them thick.
"Acacia gum is commonly used in the food industry as an emulsifier, stabiliser, and thickener in different food and drink products."
Flavour emulsions and cloud emulsions
Two jobs, one ingredient. A flavour emulsion delivers flavour oils into the drink along with some natural turbidity. A cloud emulsion is used mainly to give a drink an opaque, freshly made appearance, with little or no flavour of its own. Gum arabic is the classic stabiliser for both.
Where it is used
- Soft drinks, cordials and squashes
- Carbonated drinks and foam stabilisation
- Citrus and flavour-oil emulsions
- Beverage concentrates and syrups
Why Sudanese hashab
Gum arabic is graded by the tree it comes from. Hashab, the gum of Acacia senegal, is the beverage-emulsion grade: highly soluble, with the strongest emulsifying properties. Talha (Acacia seyal) is darker and used where emulsification matters less. Ours is grade one hashab from Sudan's gum belt, the same origin that supplies the world's drinks industry, sourced through family and established export channels.
A natural, clean-label emulsifier
Gum arabic is a single plant ingredient, so it lets a drink stay on a clean label where modified starches and synthetic emulsifiers cannot. It is plant based and suitable for vegan and vegetarian and halal products. The European food additive number is E414.
Formats and supply
We supply milled and spray-dried powder for direct use in beverage systems, plus kibbled and whole gum for producers who dissolve their own. It dissolves in cold or warm water into a low-viscosity, weakly acidic solution. Orders run from 25 kg bags to pallet lots with a specification sheet and batch documentation. See wholesale or read about other applications.
