What gum arabic powder is used for
- Food and drink. A natural emulsifier and stabiliser (E414) for soft drinks, confectionery, icings and baking.
- Soluble fibre. Milled acacia gum is sold as acacia fibre, a soluble dietary fibre that dissolves clear.
- Art. The traditional binder for watercolour paint and inks, mixed with pigment and water.
Powder, kibbled or whole?
Whole nodules and kibbled (crushed) gum are used where the gum will be dissolved or processed further. Powder is the convenient form for mixing straight into a recipe, a drink or a paint. The starting material is the same: the quality of the powder depends on the quality of the gum it began as. Ours is grade one Sudanese hashab.
